Everything that came in my box from Spice Breeze.

So what is all this stuff?

Our box insert. This month’s box features recipes from Morocco amongst other locales.

Our first spice kit is B’stilla a Moroccan spice kit. This dish is also called pastilla and is a sweet and savory pie that incorporates saffron. This is made traditionally on festive occasions. There are many variations but this one will include both chicken and almonds.

Our spice packet for this recipe includes ginger, black pepper, cinnamon, turmeric and saffron

Next up in our package is Quiche Lorraine, a French Culinary spice kit. I’ve heard of this one before but have never had it. According to the package this dish is named after Lorraine, a region in the Northeast of France. Modern versions incorporate cheese with the addition of ham and pancetta. YOu can add whatever else you’d like.

This kit includes two spice packets. The first is just Mace and the second includes fine herbs including Chervil, Chives, Tarragon, Marjoram and Parsley.

Then we have our Holiday Feast spice kit. This is a European spice kit and pays homage to roasted goose and potato dumpling dishes that are made in Northern Europe. This dish uses chicken or turkey instead as well as gnocchi. There are two spice packets included for this recipe. The first includes, Mugwort and the second includes Juniper Berries, Cloves and Bay Leaf.

I also received this packet of “Everything Healthy” seasoning. This is multipurpose and can be used on toast, popcorn, salad, noodles, eggs and more. It includes; Hemp Hearts, Nigella Seeds, Chia Seeds, Ground Flax Seeds, Nutritional Yeast, Granulated Onions, Alaea Sea Salt.

Next up is a Cambodian dish, Samlar Machu. This is a soup that gets a bit of tang from ingredients like lime and tamarind. I decided to make this one this month based on ingredients I had on hand and my own personal flavor preferences.

This recipe has just one packet and inside are lemongrass, tamarind, galangal, turmeric, chili and makrut lime.

Okay so what next?

Next we get to cooking!

First we start by preparing our rice and yes… this photo is awful!

Then we add our onion to a pot and saute until translucent. This recipe called for shallots but I didn’t have any on hand so white onion it is!

Then we’ll add our garlic and chopped chicken.. I added a bit extra since I didn’t include the shallots.

This smells AWESOME!

You’re also supposed to include your spice packet in this step too but I messed up and didn’t realize until the next step. You cook this mixture for about three or four minutes.

Our next step is to add our broth, tamari or soy sauce as well as salt to taste. It’s at this point I added my space packet as well.

One of the optional ingredients for this recipe is anchovy paste. I have been in love with this Umami Paste from Taste 5 and decided to use that instead. I just squirted about a teaspoon into the pot.

Next we’ll bring this mixture to a boil and turn the heat to medium low. We’ll allow this to cook for about thirty minutes or until the chicken is tender and falls apart easily.

s

At this point you can start chopping your vegetables. I used different colored bell peppers but you can also use bok choy, celery stalks, mushroom or whatever you prefer.

You add your vegetables 15 minutes into the 30 minute cook time. This is so colorful and pretty!

Once you’ve done that you’ll adjust the flavor with salt and limes … it looks and smells wonderful!

FYI I used a lot of lime and it is so tasty!

Then you’ll serve your soup with the rice but in separate bowls. This really is a bright and tangy dish. If you love lime and tamarind flavors this is something you’ll want tot try!

And of course I served mine without the rice – low carb life!

So in summary

Presentation: Everything was packaged well and arrived to me perfectly in my package from Spice Breeze

Quality: I love that they use organic and Non GMO spices in their packages.

Curation: This month’s spices were themed for the month and the dishes are super tasty! Great month from Spice Breeze!
